Healthy fluffy whole wheat burger buns
A scrumptious, delicious burger should be served on a wonderful fluffy white bun. Unfortunately, those are not very healthy, so how do you come up with a healthy substitute?
Well, here in Denmark we have a type of flour on the market called “Hvidhvede” (White wheat) which is milled using the entire wheat grain, which means that it is a whole grain flour, but it is fully milled.
Healthy lunch: tuna salad with skyr
Tuna salad is pure joy, but in the classic version it is drowning in mayo. Many probably love that, but it is not very healthy. The calories are going through the roof.
Here is my take on a healthy version of this salad. It has a lot of proteins and not very much fat. It is very filling and tastes absolutely gorgeous.
Pork chops with warm red pepper chutney
Pork chops is a favorite in our house, and it can be done in many ways. Here is a version that is served with a warm chutney with a bit of heat that will make your mouth water. It is served with roast potatoes with garlic and rosemary. I will show you how I make delicious, crunchy roast potatoes with just a wee bit of oil.
Spiced chicken dim sum
Here’s a wonderful asian inspired dish, with a nod to both North African cuisine, the spice rub being a version of Ras-El-Hanout and Danish cuisine with a pickled cucumber, which is what is classically served with a roast chicken in Denmark. This one is pickled in rice wine vinegar and with fresh chilies for extra punch.
